The Secret Behind the Unique Gas Sensation

KANKOUBAI SAKE BREWERY, founded in 1854, is located in Tsu City, Mie Prefecture.

In 2010, Masuda Akihiro, the president of KANKOUBAI SAKE BREWERY, began his apprenticeship under Keichiro Katsuki, the former brewing manager of AZUMAICHI and a respected mentor among sake brewers.

Since then, Mr. Masuda has rapidly refined his sake-brewing skills, blending creative ideas with unwavering dedication.

One of his notable strengths is the “unique gas sensation” in his sake.

“The unique gas sensation of KANKOUBAI is achieved by pressing the sake in a 3℃ environment, storing it at -5℃, and dissolving gas into the liquid,” Mr. Masuda passionately explained.

Report from the Brewing Site

Rice

One of the rice varieties used at KANKOUBAI SAKE BREWERY is “Asahi.”

This rice is also supplied for food use, and it tends to have a light, refreshing, and clean taste. Its characteristics make it widely used in sake brewing.

Rice Steaming

Mr. Masuda explains that lukewarm steam at the moment water is extracted is not good for the rice.

To address this, a new steamer (koshiki) was introduced. By using the pressure of the steaming machine to release the initial steam and sending only the high-quality steam to the koshiki, it ensures that the rice is steamed with optimal steam.

Moromi

There was a lively, budding sound and a sweet, delicate aroma floating through the air.

Pressing

Pressing is done in a refrigerated environment.

After pressing, the sake is bottled and subjected to bottle pasteurization, then it gets stored in a refrigerator at -5℃.
