How can I enjoy sake that has developed “hineka” (an aged aroma)?

Do you have any recommendations for enjoying sake that has developed hineka (an aged aroma), or ways to reduce the scent?

We received such a question!

Let’s answer it right away.

While it is generally difficult to remove the hineka once the aroma has developed, there are ways to make the sake easier to drink:

  1. Warm the sake (kanzake).
  2. Serve it on the rocks with ice.
  3. Add soda to make a highball-style drink.
  4. Pair it with strong-smelling fermented snacks like miso-marinated tofu, smoked cheese, or blue cheese.

Since sake with lower alcohol content tends to undergo quality changes more quickly, it is recommended to drink it sooner rather than later, as it may develop a matured aroma over time.

Please use this as a reference.
